Healthy Stuffed Bell Peppers (Paleo, Low Carb)

The best work lunch that will make you look fancy AF, but is actually super quick and healthy! This recipe will have your lunches covered for almost the entire work week (4 meals), and only takes 10 minutes to prep and 30 mins to bake.

2 Bell peppers
1 tablespoon oil
½ onion, minced
1 cup mushrooms, diced
1/2 large zucchini, chopped
1 pound chopped 93% lean ground turkey or ground chicken
2 cloves garlic, crushed
1/2 teaspoon salt
¼ teaspoon pepper
½ cup marinara sauce
4 slices part skim mozzarella (optional)


1. Preheat oven to 350 degrees F

2. Heat oil in a large skillet and sauté onions. Once onions are translucent add in chopped zucchini, mushrooms, and garlic and cook until vegetables are tender

3. Remove vegetables from stove and place in separate bowl

4. Season ground meat with salt and pepper and cook in skillet until browned

5. Stir sautéed vegetables into meat mixture and remove from heat

6. Stir in marinara sauce

7. Cut bell peppers in half and discard seeds and stem

8. Spoon meat mixture into the hollowed out pepper halves and top with a slice of cheese

9. Bake in preheated oven for 20-30 minutes. Cheese should be melted and peppers should be softened
