Turkey Vegetable Hummus Sandwich (Can be made Vegan)

I never thought that biting into bread and an overload of vegetables could be so damn delicious—UNTIL NOW. This sandwich takes minutes to make and you can utilize whatever veggies you have stashed in the fridge. Some days I throw in turkey for added protein, other days I just have the vegetables, either way it is beyond delicious !



I use whatever I have in the fridge, but my favorite veggie blend is:

  • 2 slices of bread of choice (I went with Bread Alone Sourdough)

  • 3oz. low sodium turkey breast (optional)

  • 2 tbsp. roasted red pepper hummus (I opt for Cava)

  • Arugula

  • Sliced cucumber

  • Sliced bell pepper

  • Carrot ribbons (just use a peeler to create long thin strips of carrots)

  • Roasted red peppers

  • 1 tbsp. sweet relish


  1. Toast bread, remove from toaster and smear one side of both slices with hummus

  2. Take one slice of bread and add turkey then the rest of the vegetables; carrots, bell pepper, cucumber, roasted red peppers, sweet relish

  3. Top with your other slice of bread and press down to cut in half

    NOTE: It can get a little messy so press down firm to keep the sandwich together.
