Simple Paleo Chicken Jerky (Gluten Free, Dairy Free, Soy Free)

When it comes to quick high protein snack, jerky trumps all. Epic bars and Chomp sticks are great and easy to travel with, but there’s one problem— They’re HELLA expensive.

I was getting so sick of spending so much $$$$$ on jerky, that I finally got a dehydrator and whipped up my own.

Ingredients:

  • 2lbs chicken breasts

  • 1/3 cup coconut aminos (I used Braggs)

  • 1/2 tsp. salt

  • 1/4 tsp. liquid smoke (optional, but sooo good! Omit if gluten free as it may have trace amounts)

  • 1 tbsp. apple cider vinegar

Directions:

  1. Slice chicken into 1/2- 1/4 inch strips (the thinner you make them, the less time they require in the dehydrator)

  2. Toss the chicken in a glass bowl with remaining ingredients

  3. Give everything a mix, cover with plastic and place in the refrigerator for at least 90 minutes (but overnight is best!)

  4. Remove chicken from marinade and place in a food dehydrator according to manufactures instructions. For the Nesco dehydrator I cranked it to 165 for about 5 hours (again, this depends on the thickness of the meat).

  5. Store in air tight containers in a dry place or the refrigerator
