Grab and Go Breakfast Cookies (Gluten Free, Vegan, Nut Free, Soy Free)

When you have food allergies eating healthy on the go can be rough. The other day I stopped into 711 for a quick snack during a long car ride. After snagging the last plain greek yogurt on the shelf I walked up and down the aisles looking for something granola-y to mix in.

What did I find?

Everything, LITERALLY everything had or was produced in a facility with nuts, dairy, and/or soy—AKA the biggest allergens in our country. I thought to myself “why not make my own grab and go treat?”. These cookies are: gluten free, vegan, and nut free!

Ingredients:

  • 1 cup organic old fashioned oats (gluten free if your are gluten intolerant or have celiac)

  • 6oz. ripe bananas (about 2 small bananas)

  • 1/4 cup unsweetened applesauce

  • 1/3 cup unsweetened shredded coconut

  • 2 tsp. Renew Life Acacia Fiber (optional but a little fiber makes these cookies more fililng!)

  • 2 tbsp. enjoy life chocolate chips

  • pinch of sea salt

Directions:

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper

  2. In a medium sized mixing bowl mash up banana and applesauce

  3. Mix in oats, shredded coconut, acacia fiber, and sea salt

  4. Use an ice cream scooper to scoop the cookie batter into even molds onto baking sheet

  5. Gently flatten each mound and press in chocolate chips

  6. Bake for about 15 minutes
